This recipe is probably the easiest dinner recipe that I have ever done. It is also super delicious and does not require lots of time. This pork loin is my go- to dish when I have to multitask between house, work, and taking care of my kiddos.
There are days that I do not have much time to make dinner, because I am busy with everyday chores, work and extracurricular activities - but I still need to feed my family.
This recipe for pork loin with caraway seed and onion makes my life so much easier for a few reasons:

Where are buy meat
It took me a great deal of time to figure out how to buy some good organic meat. I have to say that I am still learning and trying to discover the most sustainable and organic way to eat meat.
Anyway, in Poland, it is pretty easy to find meat that is not packed in plastic. There are so many small butcher shops that it is not an issue to buy a piece of meat every day. But in the US it is much more difficult to do everyday grocery shopping, including buying meat. Especially when living outside big towns or in the suburbs.
I found a few methods to buy different kinds of meat:
I order organic food from the Butcher Box - there deliver to your door 100% grass-fed beef, free-range organic chicken, humanely raised pork, and wild-caught seafood - which for me it very important.
If I really feel like something special, for example a lamp or lobster, I usually buy them at Costco - they do have a huge range to pick from.
I try to go every Sunday to the local farmer's market and see if there is anything that I can find.

Ingredients:
2,5 lbs pork loin
1 big onion (peeled and chopped into quarters)
1 tbsp of olive oil
1/8 tsp of salt
1/4 tsp of pepper
2 garlic cloves
Appliances:
Oven, frying pan and a 14.5 x 8 x 2.75 inch baking pan or ceramic baking dish
Step by Step
Start washing and drying the pork- make sure it is completely dry. Prepare a big frying pan, pour on the olive oil and let it heat up on a big flame. Preheat the oven to 375F.
Sear the meat on both sides. That should take about 4- 5 min. While the meat is searing, chop the onion into quarters.
Place the pork in the baking pan, pour the liquid from the frying pan on top of it.
Season it with salt and pepper and caraway seeds, chop the garlic and paste it on top of the meat, add the onion, spread them around the dish and on top of the meat.
Bake for about 45 min to an hour. Depending on how you like your meat done, you need about 20 minutes per pound.
