Ingredients

1 large butternut squash, peeled, seeds removed, and cut into small cubes
1 onion, chopped
2 cloves garlic, minced
4 cups vegetable or chicken broth
1/2 tsp ground nutmeg
1/4 tsp cayenne pepper
Salt and pepper to taste
chopped parsley to garnish

Preparation

Step 1

In a large frying pan, heat some olive oil over medium heat. Add the onion and garlic, and sauté until soft and fragrant, add the chopped butter nut squash cook until it get color.

Step 2

In a large pot mix together broth, nutmeg, and cayenne pepper, and the cooked butter nut squash and onion. Bring to a boil, then reduce heat and let simmer for 20-25 minutes, or until the squash is tender.

Step 3

Using an immersion blender or a regular blender, puree the soup until smooth.
Add salt and pepper to your taste.

Step 4

Serve hot, garnished with some parsley or croutons if desired.
