Polish meat pierogi

About the Recipe

Pierogi is a traditional Polish dish that has become popular all around the world. It consists of dumplings that are typically stuffed with various fillings. One of the most popular pierogi fillings is meat, which can be prepared in many different ways.

Ingredients

2 cups of flour
1 egg
½ cup of warm water
¼ teaspoon of salt
¼ pound of ground beef
¼ pound of ground pork
½ cup of finely chopped onions
2 cloves of garlic, minced
1 tbsp of butter
2 tbsp of olive oil
Salt and pepper to taste
Hand full of chopped chives
1 jar of cucumbers in brine or pickles for garnish

Preparation

Step 1
In a large mixing bowl, combine the flour, egg, warm water, and salt. Knead the dough until it becomes soft and smooth. Let it rest for 30 minutes.

Step 2
In a skillet (or frying pan), melt the butter and 1 tbsp of olive oil over medium heat. Add the finely chopped onions and minced garlic.
Cook for 2-3 minutes or until the onions become translucent.
Add the ground meats to the skillet and cook until browned. Season with salt and pepper to taste. Set aside.

Step 3
Roll out the dough on a floured surface until it is about ⅛ inch thick. Use a round cookie cutter or a cup to cut out circles from the dough.

Step 4
Put a spoonful of the meat filling in the center of each circle. Fold the circle in half, pressing the edges together to seal the pierogi.

Step 5
Bring a pot of salted water to a boil. Carefully drop the pierogi into the boiling water and cook for about 2-3 minutes or until they float to the surface. Put them a side on a wooden desk or plate let them dry and cool down.

Step 6
Preheat a big frying pan with a tbsp of olive oil on a medium heat. Take a portion of cooled down pierogi (10-12) and put them on the pan, fry until golden brown on one side then flip.
