Polish tomato soup with rice

About the Recipe

Tomato soup or rosół (chicken/ beef broth with noodles) were and still are one of the best and most common soups served to kids in Poland. They are also made very often on Sundays.
Polish traditional tomato soup is usually served with rice or noodles, full of vegetables a bits of chicken meat.
Easy to make, it is a meal within itself and kids absolutely love it.

Ingredients

The broth for the soup

For the broth you can make use the recipe: chicken stock from leftovers

Or:
3 chicken drumsticks and 3 chicken thighs
2 medium carrots
1 small parsley root
1 parsley greens
1/2 celery root
1 small onion
7 -8 cups of water - tap or filtered

Spices and herbs

1 grains of allspice
1 bay leaf
1 peeled and chopped garlic clove
salt and pepper

The other ingredients
hand full of green beans (if your kids do not like green beans omit them)
2 big potatoes
1 small jar of tomato paste
2 big peeled tomatoes
4 tablespoons of sour cream 18% (if you like)
chopped parsley
1 cup of cooked rice (in a separate pot)

Preparation

Step 1

Wash the drumsticks and thighs, placing them into a pot. Pour in cold water (up to 8 cups). Cook over low heat for about 30 min and collect the scum until they stop flowing out.
Peel the green beans and chop them roughly.

Step 2

Add peeled vegetables for the broth, spices, salt and pepper. Cook for another 30 min.
In the meantime rinse and cook the rice and chop the parsley.
Peel, deseed and chop tomatoes.

Step 3

After 30 min., take out the bay leaf and the vegetables, cool them down. Discard the cooked parsley and roughly chop the rest of the vegetables. Add them back to the broth.

Step 4

Add the beans, tomato paste and chopped tomatoes.
Mix in the cream with a little bit of water and pour it into the soup, cook for next 15 min.

Served with the rice, garnished with parsley.
